Breakfast is the most important meal of the day. It might also be the best meal of the day, no matter what time you serve it. Something that I’ve missed most during this pandemic is late-night trips to 24-hour diners. There’s something about 3 am that makes pancakes taste better. Maybe, it’s the burnt coffee that’s been sitting for at least two hours. Diners may not be a thing for a few more months, but why not bring the special breakfasts home? 

Christmas breakfast is a tradition in my family. Thankfully, it’s one of the few traditions we can keep safely this year. Typically, we have eggs with green peppers and onions for breakfast. It’s a crowd-pleaser. I highly recommend it. As delicious as this is, I want to make something different this year. Most of the diners or breakfast places I favor usually serve some crazy pancakes or over the top french toast. I have just the thing. Pillsbury Cinnamon Roll Casserole.

I tried this recipe a few months back. It’s not the healthiest recipe, but it’s great for special occasions. It’s also easy to throw together. There is minimal prep work. If you’re anything like me, you keep Pillsbury cinnamon rolls on hand. 

What you’ll need:

-2 cans of Pillsbury Cinnamon Rolls

-4 large eggs

-1 tsp. cinnamon 

-⅔ cups heavy cream

-¼ cup maple syrup  

Preheat your oven to 350 degrees Fahrenheit. You’ll want to use a 9×13 baking pan. Make sure you spray it with your choice of cooking spray!  I prefer coconut oil. Next, you’ll want to open both packs of cinnamon rolls. Keep the icing! We’re going to need it later. Once all of your rolls have been pulled apart, you’re going to cut each one into fours. Take those bits and spread them evenly in the baking dish. It’s time for the mixture! In a mixing bowl, combine heavy cream, eggs, and cinnamon. Then pour the mixture over your cinnamon roll bits. Top the combination with your maple syrup. Pop in your heated oven for 30-35 minutes or until golden brown. Do you remember the icing from earlier? You’re going to need it now. You’ll want to heat the icing for a few seconds. You want the icing to become more of a liquid consistency. Drizzle the icing on top of the casserole, serve, and prepare for praises! 

Can you think of a better present on Christmas morning? A delicious breakfast that can bake while you’re opening presents. I think it’s a win all around!
