Happy Blogmas Day 11

Last week we kicked our weekend off with a cocktail recipe. This time we’re getting a little cozier with a cookie recipe. Today we’re making vegan gingerbread cookies. This is not my recipe, but I’ve been dying to make it. I saw Kalyn Nicholson on YouTube make these cookies last Christmas. Have I had this recipe written down since then? I have. So, I’m finally making it with all of you! 

Gingerbread can be a hit or miss for people. Correct me if I’m wrong, but I think spicy flavors are either loved or hated. I am someone who loves spicy flavors. These aren’t just gingerbread cookies though. These are vegan gingerbread cookies. I’m not personally vegan, but I do enjoy vegan food. 

For this recipe you will need: 

-¼ cup melted vegan butter (coconut oil works too)

-¼ cup brown sugar

-⅓ cup molasses 

-½ tsp. vanilla 

-1 ½ cups flour 

-1 tsp. baking powder

-pinch of salt

-1 tsp. ginger 

-1 tsp. nutmeg

-pinch of cloves 

To start, you’re going to want to combine the flour, baking powder, salt, and all the spices. Once they’re all combined you’re going to mix the brown sugar, melted vegan butter (coconut oil works too), and molasses. Then you’ll combine the dry ingredients with the wet. When everything is mixed together that’s when you’ll add the vanilla extract. Ideally, you want to give the batter two hours to cool. After two hours, the dough can be rolled. We’re getting to the fun part. This is when we get to use cookie cutters. Who doesn’t love fun shaped cookies? Cook your fun shapes for 8-10 minutes at 350 degrees. You’ll want to let them cool a bit before adding icing. Maybe you want to skip icing altogether. Either way, enjoy!
